Cook: Fiesta Salad

My Auntie Sue gave me some delicious Mexican seasoning and instead of using it on the regular recipes for enchiladas, chili or Mexican food, I decided to use it for a salad. You can do this with or without a protein, there’s plenty of non-meat vegetables to fill you up. I kind of like to think of it as a salsa salad! A good option for Mexican flavored food if you want to skip out on the carbs.


Ingredients:

  • Butterhead and/or iceberg lettuce

  • Cherry tomatoes (cut in half, preferably the multi-colored ones)

  • Red onions (diced)

  • A can of corn

  • Avocado (sliced)

  • Protein of your choice (cooked in taco seasoning)

Directions:

  • Toss all the ingredients together and top with olive oil and vinegar plus some fresh squeezed lime juice, so very simple!
