Cook: Winter Citrus Salad

In the winter time, all I want to eat is soup. But, when I do need to get some greens in, I like to add citrus. Here’s a super quick salad recipe that combines some of the best types of winter citrus to add some color and light to the cold nights. Citrus can be sweeter in the winter time since the air is colder, so I like to balance it out with some radishes, deep green leafy spinach leaves and thinly sliced onions.


Suggested Ingredients:

  • Spinach and/or arugula as your base

  • Blood oranges, grapefruits and regular oranges for your citrus (peel the rind away as close as possible and slice into wedges)

  • Thinly sliced white onions

  • Radishes

  • Mint and or basil (chopped for garnish)

  • Feta cheese (crumbled)

  • Salt and pepper to taste

Dressing:

  • Shallot (diced)

  • Red wine vinegar

  • Extra Virgin Olive Oil

Let the shallot macerate in the red wine vinegar for 15-20 minutes. Mix it with olive oil, some salt and pepper and toss your salad.

For some extra flair, add some smoked sea salt!
