March brings more sunshine, fresh veggies, and a craving for lighter, brighter meals. As the days stretch longer and everything begins to bloom, I naturally transition from hearty soups and comfort food to cold noodle dishes, healthy grain bowls, and vibrantly colored salads. But let’s be real—March and April are Colorado’s snowiest months, so soup season isn’t over just yet! Expect a mix of cozy and fresh in this month’s roundup of must-try eats.

In this edition of Hello, Delicious!, I’m sharing recipes that had me running back for seconds, plus a spotlight on a world-class sushi chef you need to book before he’s gone. And as always, I love testing recipes from around the internet—so if there’s something you want me to try, drop a comment!

Appetizers: Two Viral Recipes I Had to Try

What is it? A comforting, garlicky yogurt pasta with spiced ground meat. You can check out the original viral video here. Believe it or not, I first heard about this dish on a political podcast. Naturally, I dropped everything, hit the store, and got to cooking.

Since I try to avoid red meat during the week, I swapped ground beef for turkey—same delicious result. I also used whole wheat pasta for an extra health boost which is a regular substitution in our house. My copycat version of the recipe is here. Try it out and let me know what you think!

Why I love it: It’s simple, satisfying, and packed with flavor. The combination of warm, spiced turkey, creamy garlic yogurt sauce, juicy cherry tomatoes, and fresh herbs is chef’s kiss.

Verdict: 10/10—add this to your weekly rotation ASAP.

Smashburger Tacos

What is it? If a smashburger and a taco had a love child, this would be it. My cousin sent me a video of this recipe and, since we have a Blackstone flat top, we had to try it.

These were a hit. I love a good DIY taco or burger bar, and this was the best of both worlds. We grilled up the smashburgers, slapped a tortilla on top, let the meat brown, flipped it, then topped it with melty American cheese.

For toppings, we went classic: chopped romaine, tomatoes, onions, and the real MVP—homemade In-N-Out sauce. While I don’t measure, my go-to mix includes:

  • Ketchup, mustard, mayo

  • Sweet relish

  • Paprika, garlic salt

  • Kosher salt and pepper

Verdict: 8/10—takes some effort but perfect for a backyard BBQ or a fun weekend cookout.

Main Dish: Fish on Rice

Last year, I was introduced to the incredible Chef Mark Dinh of Fish on Rice, a high-end omakase service that brings an unforgettable sushi experience straight to your home.

What is Omakase?

Omakase means “chef’s choice,” where you put your trust in the sushi chef to craft a unique, seasonal tasting menu. It’s the best way to enjoy sushi, and Chef Mark delivers.

His resume? Impressive. He’s worked at Nobu’s Matsuhisa (Denver), Le Bernardin, and Morimoto and even launched Matsuhisa Vail under Nobu Matsuhisa himself. TL;DR—this guy knows sushi.

Why you need to book him NOW:

  • He’s only available through the end of the year!

  • He customizes each experience, remembering your preferences and stepping it up every time.

  • Expect 18+ courses featuring fish flown in from Japan and Maine, plus local Colorado produce.

  • If you’re lucky, you may get caviar straight from the tin (caviar bumps, anyone?).

I’ve booked Chef Mark multiple times, and each experience has been unforgettable. If you want a next-level at-home sushi for a romantic date night or with a large group of your favorite people, this is it.

Dessert: Ground Turkey, The Underrated MVP

As mentioned, I try to cut back on red meat during the week, and ground turkey has become my go-to protein. Done right, it’s juicy, flavorful, and works with so many cuisines. Here are some of my ground turkey recipes I’ve been loving this month:
