Cook: Japanese Avo Toast

Tired of regular old avocado toast? This recipe will spice up your avocado toast game and can be served for breakfast, lunch or dinner! Hard-boiled eggs, furikake and ginger make the perfect toppings for this Japanese style avocado dish.


Ingredients:

  • Sliced bread (I like to use wheat or Shokupan bread from the Asian market. Wheat, if we’re trying to be healthy. Really you can use any bread you like)

  • Ripe avocados

  • Hard boiled eggs - I stuck my eggs in soy sauce mixed with a little bit of sugar overnight to create shoyu boiled eggs. They give the eggs a bit more flavor and are also perfect to add to ramen.

  • Lemon juice (it helps keep the avocado fresh and adds brightness)

  • Sesame oil

  • Togarashi

  • Furikake

  • Red ginger

  • Flaky sea salt

Directions:

  • Boil eggs and prepare your avocado mash. Mash up ripe avocado with some lemon juice, salt and pepper and a small drizzle of olive oil.

  • Toast your bread and top with avocado.

  • Cut your boiled eggs in half, place on top of the avocado and sprinkle on furikake and red ginger (shoga). Give the toast one last small drizzle of olive oil and top with flaky Maldon sea salt.
